The advantage of evolving Gurdurr on your bench into Conkeldurr is that you can put the great amount of energy cards needed to attack on the card without being attacked, and since Gurdurr does have a low hp for a stage 1 card you'll definitely want to avoid getting attacked before you evolve Gurdurr into Conkeldurr
The most popular version of this I've seen by a mile is Ghalta, Primal HungerGhalta, Primal Hunger decks slapping down their commander on turn three, but there are some sneaky good other options if you look through the list
